Bergamo has an ancient dairy tradition dating back to the Roman age, but that developed industrially in the lowlands already from the XIII century, improved thanks to the cooperation grown in the first half of the 1900's. Bergamo’s cheeses are characterized by a particular typicality which includes an invaluable cultural heritage especially in fringe areas where tradition is still deeply rooted.
