Anyone from Bergamo wouldn’t accept to be served with a polenta which isn’t his/her polenta: the one that according to old grandmothers’ recipes, is still poured on a trencher, a polenta which is gold yellow, steaming, scented and soft. The Institute for Cereal Growing in Stezzano has created, exclusively for the province of Bergamo, an hybrid originating from ancient local varieties. This variety produces an excellent glassy grain, of small dimensions, of a very intense colour and with a superb persistence during the preservation. The 12 cultivated hectares, once they are reaped, are carefully processed respecting the product, neither without particular treatments nor chemical substances for the preservation.
